Ice cream makers are running busy production schedules as they prepare for strong summer demand. Cream production is declining, as warmer temperatures contribute to reduced milk component levels. Class II processors are purchasing most of the cream available in the region. Some butter makers searching for spot cream are securing loads from the West to maintain full production schedules.
