Milk component levels are declining in the region, negatively impacting cream production. Cream multiples increased across the range this week. Demand for cream picked up following last week’s holiday. Class II processors are purchasing most of the spot cream available, though butter makers are increasingly interested in spot volumes. Churning is active in the region.




NORTHEAST
Here’s what USDA/AMS had to say:
Class IV to make cream for butter manufacturing is seasonally declining. Class II is absorbing most of the available cream as ice cream manufacturing continues through July, and yogurt demand remains steady. Ice cream manufacturing is currently at its peak.
